PSTK and bare pans result in a similar bake, though PSTK coating lends a slightly darker bake to the bottom of the crust. This doesn’t affect flavor or consistency, as both types of pans are adept at creating the perfect Detroit Style Pizza bake.
The major difference between the pans is post-bake; the easy-release PSTK coating means the pizza should be quick and simple to remove. Despite the easy release coating, cheese still caramelizes to the crust – a signature of Detroit Style Pizza – during baking. Both pans produce pizza that’s light and airy on the inside, crispy on the outside, and that are indistinguishable from one another in terms of flavor and consistency.
Seasoning and Maintenance
PSTK pans require no seasoning (they’re pre-seasoned, after all) and are much easier to maintain than bare pans. Seasoning is a time-intensive process that requires large commercial ovens with plenty of ventilation and significant time investment: you have to oil the pans then bake them for 30 to 45 minutes three to five times each. Seasoning isn’t a one-and-done deal, either; bare pans need to be re-seasoned every two to three years.
PSTK pans cost more than bare pans; but the trade-off is you have to season bare pans yourself or pay for a seasoning service. The time cost of seasoning and long-term maintenance for bare pans can easily outweigh the initial investment for PSTK pans. Bare pans are cheaper up front, but more difficult and costly to maintain.

If you’re experienced Detroit Style Pizza Maker who prefers “old school” tradition and you want to season your own pans, bare pans might be an option, albeit a time-consuming option.
